My name is Daniel Koch; I am a food engineer and have worked in the food industry for many years. During that time,

I faced a major dilemma almost every day: a customer would pull out, a product would be delisted, or, due to an existing contract,

we would have purchased too much stock.

These perfectly good raw materials can no longer be used internally, and it is not possible to sell them off quickly, as

there are no contacts or the products are not packaged in smaller quantities.

This is where the Raw Materials Exchange comes in. On the one hand, we have a large network of restaurateurs, caterers and

SMEs; on the other, we work in partnership with the Quellenhof Foundation in Winterthur, where the food is repackaged into

smaller containers and appropriately labelled and declared. In this way, we ensure that perfectly good surplus stock from the

food industry finds an ideal use in the catering sector. As a restaurateur, you benefit from high-quality ingredients at affordable

prices. And together, we make a significant contribution to reducing food waste! Nature thanks us for it.

We mainly supply food, though from time to time we are also offered packaging or supplies such as gloves.

Since we launched in 2024, we have already saved almost 30 tonnes of food from being disposed of or used as animal feed!

We look forward to working with you via Mercanto and standing together for ‘FOOD SAVE’!
